Whats the biggest I could go on the rear, the quad shocks are off, and I have 15's. I put 275/60/15's on but they seemed like they were rubbing on the inside. Any help is appreciated.

For about $20.00 at any parts store you can get some 7/16" spacers to give you the clearance!! But it sounds like your backspace on the wheels are kinda wrong, so the spacer should clear any rubbing!!

15x8, so if I do the 7/16 spacers I could fit the 275/60 if i roll the fenders too?

Depending on what backspacing you have on those rims?? I am running that size and I haven't rolled myfenders, but those Fox bodies squat a little more, so rolling them would be a smart thing to do!!
But with that spacer in there, you should getthe clearance you need to eliminate the rub!!:2up:

Whats the biggest M/T street ET drag radial I can put on a 15X7? I have normal 225/60's on there now. If I could sqeeze a 255/60 M/T would anything rub on launch?

M/T makes a 26" DR for a 7" rim, a 235x60! It measures about 9.5", so you'll get the good launching sidewall and shouldn't be much of a rubbing issue? That 255 might be a little too wide, but what the hell??? LOL

I used to run a 295 /50 /15 on a 15x8 rim with the quads removed on a 92 5.0 coupe I used to have. Fenders were rolled and it still rubbed under hard driveways and inclines but it wasn't real bad. It was lowered an inch from stock also. It looked super wicked. That 275/60 gonna be a taller tire. I'm thinkin it should be ok.
